Breakfast Recipes of the Hawaiian Islands

Loco Moco Recipe

I don't beleive that breakfast recipes of the Hawaiian island would be complete without loco moco. Important note if you are not hungry pass this one now. If you are concerned about cholesterol this is not your recipe. If you want a big breakfast to fuel you day or don't mind taking a nap in the morning you are going to love this.

1/4 pound ground beef

1 egg

Hot prepared gravy

Hot pepper sauce

Tomato ketchup

Soy sauce Rice

This one is simple to make. Start by cooking a hamburger patty to your taste in a frying pan. After the patty is done, place it to the side and fry an egg in the hamburger grease.(sunny-side up or over easy works the best) Place a bed of cooked rice on a plate and place the cooked hamburger patty on top. On top of the hamburger place your cooked egg and 1 or 2 or two ladles of hot gravy.(I like beef gravy) The next part is up to your tastes, add hot pepper sauce, ketchup, or soy sauce to taste. Remember this serves only one very hungry person, but if you share we will not tell on you. Also I call this a breakfast dish but it is popular in Hawaii for dinner and supper also.

Macadamia Nut Pancakes

If you ever travel to the Hawaiian islands macadamia nut pancakes will pop out at you on almost any breakfast menu. There is no reason that you can not have them now at home by following this recipe.

Ingredients:

1/2 cup chopped macadamia nuts

1 teaspoon vanilla extract

2 eggs

3 tablespoon unsalted melted butter

1 1/2 cups buttermilk

1/4 teaspoon salt

1/2 teaspoon baking soda

1 1/2 teaspoons baking powder

3 tablespoons sugar

1 1/2 cups all-purpose flour

1/2 cup maple syrup

In a mixing bowl combine the four, sugar, baking powder, baking soda, and salt. Mix thoroughly.

In a different bowl mix the buttermilk, butter, eggs, and vanilla extract. Mix very well.

Combine the dry and wet together and stir until you get a lumpy batter.

Heat a non stick pan or griddle over a low heat.

Depending on the size of the pancake pour a portion of the batter into the frying pan or griddle.

Sprinkle some of the chopped macadamia nuts onto the pancake.

Once the sides of the pancake begins to harden and bubbles start to appear on the top of the pancake flip it over.

Cook for another minute or two and remove.

One more thing is needed to get the full island effect and it not easy to find anywhere but Hawaii. Maple syrup can be used and tastes great but coconut sprup best, enjoy and think sunrise on the islands.

The following is a link to where you can get coconut sprup.

Hawaiian Bread

Try this bread for something different.

1/2 cup canned or fresh pineapple chucks well drained

1/4 cup maple syrup, (you can use sugar free)

1/4 cup half and half cream

1 egg well beaten

1 banana mashed

3 cups bread flour

1/4 cup whole ground flaxseed meal

1 teaspoon salt

3 tablespoons butter

1 tablespoon sugar

1/2 cup shredded coconut

1/2 cup mini marshmallows

1/3 cup chopped almonds

1/4 teaspoon baking soda

2 tablespoons cinnamon

2 packages (1/4oz) rapid rise dry yeast

1/3 cup raisins

Set your bread machine to basic loaf, light crust, 1 or 2 pound loaf.

Add water while machine is running if the mixture appears dry.

Remove loaf from pan after baking and place in rack to cool.

Great for breakfast.
